To keep chocolate at its very best, follow these simple rules of thumb:
- Keep chocolate in a cool place, below 70°F (20°C) if possible. At high temperatures, chocolate will grey in colour (called "blooming").
- Do not refrigerate chocolate. It will turn dull and grainy in texture with the humidity.
- Store in an airtight wrap or container. Like butter, chocolate will absorb odours from other foods.
- Do not store chocolate in cupboards immediately next to your fridge or stove. Fluctuations in temperature can cause the chocolate to bloom.
