Preparing Fresh Mushrooms
Utensils/Equipment:
Cutting Board, Paring Knife, Paper Towels, Soft Brush, Colander
Wipe mushrooms gently with a damp paper towel or soft brush. Wash mushrooms just before using.
Mushrooms can be rinsed quickly under cool running water. Never soak mushrooms, they will absorb the water and become soggy.
Dry mushrooms with paper towels immediately after rinsing to remove excess moisture.
Trim and discard the ends of the mushroom stems. If the stems are tough and woody, remove them entirely. Shiitake mushroom stems tend to be too tough and woody to eat and should be removed entirely.
