Storing Vegetables

Broccoli
Store in the fridge and use within 3 to 4 days.

Belgian Endive
Refrigerate in plastic up to 1 week.

Carrots
Store in fridge in their original plastic bag. Always keep excess moisture out to prevent dehydration.

Cauliflower
Do not wash before storing, and store with heads down to prevent moisture from forming on florets.

Mushrooms
A good way to prevent mushrooms from getting wet and mouldy is to store them in a paper bag in the crisper. Never store them in plastic bags or plastic containers; mushrooms go bad when they get wet.

Potatoes
Store out of direct sunlight. Exposure can cause potatoes to green and sprout. Good air circulation is important.

Radicchio
Radicchio can last up to one month when stored in the fridge.

Squash
Squash does not require refrigeration and should be kept in a cool, dark place for a month or more, depending on the variety. Once the seeds are removed, winter squash can be baked, steamed or simmered.

Salads
For crisper greens wash in cold water and dry with salad spinner, paper towels or a kitchen towel. Store in a sealed plastic bag in the fridge.

Snap beans
Store in the fridge. Do not snap off ends, and keep beans dry.
