Tortilla Terminology
Mexican dishes have similar ingredients. It's how you roll it, bake it or stuff it that makes each dish unique.
- Tacos: This dish includes a soft or hard, folded corn tortilla filled with any combination of beef, pork, chicken, tomatoes, lettuce, cheese, onion, guacamole, refried beans or salsa.
- Burritos: Flour tortillas are folded and rolled to completely enclose several savoury fillings including meat or beans, lettuce, cheese, tomatoes, salsa and rice; they are sometimes topped with sour cream.
- Enchiladas: Soft flour or corn tortillas are filled with meat or cheese and baked. Enchiladas are usually topped with a tomato-based salsa and sprinkled with cheese.
- Fajitas: The fajita consists of strips of marinated and grilled skirt steak or chicken served in a flour tortilla with grilled vegetables such as onions and peppers, and is topped with guacamole and salsa.
