KD SMART WITH PURÉED SQUASH

Prep Time: 20 min.

Makes: 3 servings, ¾ cup (175 mL) each.

What You Need:

  • 1 pkg. (150 g) Kraft Dinner Smart Vegetables Macaroni & Cheese
  • ½ cup puréed cooked butternut squash

Make It:

Prepare Kraft Dinner as directed on package, using the Sensible Solution directions.

Stir in squash; cook and stir 1 min. or until heated through.

How to Cook and Purée Squash:

Peel 1 butternut squash; cut into chunks. Place in large saucepan; cover with water. Bring to boil; simmer on medium-low heat 12 to
15 min. or until squash is tender. Drain. Blend in blender, in batches if necessary, until smooth. Remove ½ cup to prepare recipe. Spoon remaining purée into ice cube trays. Freeze 1 hour. Remove from tray; place in freezer-weight resealable plastic bags. Next time you prepare this tasty mac and cheese, add 6 thawed squash cubes to the hot drained macaroni with the cheese sauce mix, milk and margarine; mix well. Return to heat, if necessary, to cook until squash is heated through, stirring constantly.

The squash in this flavourful main dish provides an excellent source of Vitamin A.
