    How to Decorate with Chocolate

    This method of melting helps chocolate reset properly and gives it a crisp, shiny coating. There are two ways to partially melt chocolate - the hot water method and the microwave method.

    Hot Water Method
    Chop chocolate squares into small pieces. Place them in a heatproof bowl and set over a pan of simmering, but not boiling, water. Be careful not to get water into the melting chocolate or it will become grainy.

    Melt chocolate, stirring constantly, until about two-thirds is melted. Remove from heat and continue stirring until completely smooth.

    Keep melted chocolate lukewarm while dipping or drizzling by placing bowl over a pan of warm water.

    Microwave Method
    To melt chocolate squares in the microwave, unwrap squares, chop and place in a microwaveable bowl. Be careful to ensure that the utensils and bowl are completely dry. Just one drop of water can make the chocolate grainy.

    Melt on MEDIUM power for about 1 ½ to 2 minutes for 2 squares, stirring after the first minute. Add about 1 minute for each additional square.

    Watch carefully, microwave ovens vary. Do not overheat. The chocolate should be soft but not completely melted. Once partially melted, remove from microwave and continue to stir until completely melted and smooth.
