Oatmeal-Bran Muffins

Makes: 24 muffins Total Time: 30 min

Ingredients:
  • 1 1/2 cups boiling water
  • 1/2 cup oats
  • 1/2 cup All Bran
  • 1/2 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups flour
Preparation
1) Pour boiling water over oats and bran, let stand 10 minutes.

2) Combine remaining ingredients, and add oat mixture to them. Pour into muffin tins.

3) Bake at 350°F for 15 minutes or until toothpick comes out clean.
Notes
Can add 1/2 cup chocolate chips before pouring into muffin tins.

You can use all white sugar if you do not have brown sugar, still works out well.
