Ingredients:
- 1/4 cup grated onion
- 7 Tbsp. ketchup, divided
- 1 1/4 lb. lean ground turkey
- 3 cups shredded broccoli
- 2 eggs
- 1/2 cup quick cooking oats
- 2 tsp. garlic powder
- 1 tsp. salt
Preparation
1. Preheat oven to 350 degrees F. Line 12-15 compartments of a muffin pan with baking cups or cooking spray.
2. Combine all ingredients except 3 Tbsp. of ketchup in large mixing bowl. Distribute mixture evenly among cups. Brush with remaining ketchup.
3. Bake until firm with lightly browned edges approx. 30-35 minutes.
Notes
I found this in a People magazine but couldn't find the recipe online so I thought I'd put it out there. It's quite good. I also went about half ketchup half BBQ sauce.
