This was great! I did as one viewer suggested and mix black beans in it. Also to cut calories I just put a small amount of low fat cheese on each individual portion.

Excellent! After many times, we still love it. Used the leftovers the next night -chopped chicken into smaller pieces, spread it all over nacho chips. Added about 1/2 jar of taco sauce and sprinkle with Tex Mex Cheese. Put in oven until brown. Reomove and slice like a pie and top with sour cream. My guys cleaned the plate! Line pan with tin foil for easier clean-up!
