What You Need

125 g (1/2 of 250-g pkg.) Philadelphia Brick Cream Cheese, softened

1 pkg. (300 g) frozen chopped spinach, thawed, well drained

1-1/4 cups Kraft Mozzarella Shredded Cheese, divided

6 Tbsp. Kraft 100% Parmesan Grated Cheese, divided

6 small boneless skinless chicken breasts (1-1/2 lb./675 g), pounded to 1/4-inch thickness

1 egg

10 Ritz Crackers, crushed (about 1/3 cup)

1-1/2 cups pasta sauce

Make It

HEAT oven to 375ºF.

MIX cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until blended; spread onto chicken. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.

BEAT egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture to evenly coat. Place, seam sides down, in 13x9-inch baking dish sprayed with cooking spray.

BAKE 30 min. or until chicken is done (170ºF), heating pasta sauce near the end of the chicken baking time. Discard toothpicks. Serve chicken topped with pasta sauce and remaining mozzarella.

Make Ahead

Assemble chicken bundles and place in baking dish as directed. Refrigerate up to 4 hours. When ready to serve, bake, uncovered, in 375ºF oven 35 min. or until chicken is done (170ºF).

Special Extra

Stir chopped fresh basil and/or sliced black olives into pasta sauce before heating.

Variation

Prepare using Philadelphia Light Brick Cream Cheese Spread, Kraft Part Skim Mozzarella Shredded Cheese, Kraft 100% Parmesan Light Grated Cheese and Ritz 30% Less Fat Crackers.

Delicious meal that you can prepare in advance and just slide in the oven when guests are at the door, or when you're back from a long day at work... I usually use small chicken breasts, but I slice them halfway, length wise (like I would slice a hot-dog bun open) so that it is easier to stuff and roll. I tried to flatten them with a meat tenderizer, but it doesn't make as good a job.

This was truly delicious!! I had a bit of difficulty rolling my bundles...would use larger chicken breasts or less spinach/cream cheese mixture next time. But the flavour was unbelievably great!

My husband and I both love this recipe! I'm paranoid about under-cooking chicken, so I often end up over-cooking, and drying out chicken. The water from the Spinach kept the chicken nice and moist, which my husband greatly appreciated. My biggeset compliment about this recipe is that my chicken bundles came out of the oven looking just like the display picture! This is a great recipe to make when company is over, because it makes a lot, and looks impressive.

All my husband does is complain that all i feed him since we got married 9 years ago, is feed him chicken. He hates chicken. Well... he asked for seconds! I knew that if this was his reaction, then it wouldj be perfect for my dinner party the following week. I was right! It was a huge hit!
