Lemon Coconut Squares

What You Need

1-1/3 cups finely crushed Nilla Vanilla Wafers

1 cup granulated sugar, divided

1/4 cup margarine, melted

1 tsp. grated lemon zest

2 eggs

1/4 cup lemon juice

2 Tbsp. flour

1/2 tsp. Magic Baking Powder

1/4 tsp. salt

1/3 cup desiccated coconut

Make It

PREHEAT oven to 350°F. Mix wafer crumbs, 1/4 cup of the sugar, the margarine and lemon peel until well blended. Press evenly into 8-inch square baking pan. Bake 8 minutes.

BEAT eggs and the remaining 3/4 cup sugar in small bowl until thickened. Add lemon juice, flour, baking powder and salt; mix well. Pour over crust; sprinkle with coconut.

BAKE 25 to 30 minutes or until centre is set and top is lightly browned. Cool completely. Cover and refrigerate several hours or until chilled. Cut into 20 squares to serve. Store in airtight container in refrigerator.

Chewy cookie base, lemony filling and toasted coconut topping -- heaven!! I made these last night to bring to the office but, by the time I finished "trimming the edges" and nibbling, there were barely enough squares to put into a small container. My husband loves these, too, so I'll definitely be making them again. Give them a try; you won't be disappointed.

They are just amazing. I made one batch and about an hour later, I made another b/c everyone couldn't stop eating them. The lemon is a great alternative to the usual square recipes!!!!

We love anything lemon in our house. They were a big hit and a nice change from chocolate. Will definitely be making them again. The only change will be making a bigger batch. One pan didn't last long.
