Cheesy Scalloped Potatoes & Carrots

What You Need

2 lb. (900 g) Yukon gold potatoes (about 6), peeled, thinly sliced

4 carrots, cut diagonally into thin slices

2 onions, sliced, separated into rings

3 Tbsp. butter

2 Tbsp. flour

1 tsp. salt

1/2 tsp. black pepper

1/4 tsp. cayenne pepper

1-1/2 cups milk

1-1/2 cups shredded Cracker Barrel Old Cheddar Cheese

Make It

HEAT oven to 375°F.

COOK vegetables in boiling water in large saucepan 8 to 10 min. or until tender. Meanwhile, melt butter in medium saucepan on medium heat. Add flour and seasonings; mix well. Cook and stir 1 min. Gradually stir in milk until well blended. Bring to boil on medium heat; cook 5 min. or until thickened, stirring constantly. Stir in cheese; cook on low heat 1 min. or until melted, stirring constantly.

DRAIN vegetable mixture; spoon half into 13x9-inch baking dish sprayed with cooking spray. Cover with half the cheese sauce. Repeat layers; cover.

BAKE 45 min. to 1 hour or until vegetable mixture is heated through, uncovering after 30 min.

Look for firm, smooth, well-shaped potatoes that are free of wrinkles, cracks and blemishes. Avoid any with green-tinged skins or sprouting "eyes" or buds.

Loved adding the carrots in this recipe for the added nutrition. I was short one potatoe and ended up using 5 red potatoes and one large yam and it turned out delicious. It was a well liked by both kids and adults. The only other changes I made were decreasing the salt to 1/2 tsp., and increasing the milk to 2 cups. My 14 year old son wants me to make it again soon.

We love this recipe in my house! We have made it several times. The only thing we change is we add garlic and a little less pepper. Fantastic and easy recipe!

I have four VERY fussy children and all four of them ate this. This in and of its self is unheard of at my house. One thing I did do a bit different is a few minutes before serving is I uncovered and added shredded cheese and cooked until a bit crispy and then served. It was VERY good and will be making again for sure.

Excellent dish! I love the addition of the carrots and cayenne pepper to make a more interesting scalloped potato dish. I would make it again as is and also try making it with the addition of other vegetables.

I made this with a roast chicken and the family loved it...used all the leaftovers in a chicken soup and the soup was a bigger hit then the dinner!
