These were very good! I sauteed my onions for a few minutes with a bit of EVOO and 1 tsp. chopped garlic before adding to egg mixture (let them cool for a few minutes). My husband added a few dashes of hot sauce to his and also thought chili sauce would be good.

I made it just as in recipe. For the mom's that think you can't get your kids to eat spinach, this is the recipe for you. I have 5 kids. Spinach is rarely a success in our house. This recipe was easy, they liked it. The sour cream was a great addition. I agree with another reviewer - this recipe is why you should always try new things. You might be pleasantly surprised! My husband was impressed.

Simple, easy to make, delicious. I added a little garlic and a Tbsp. of balsamic vinegar just to add a little zip.
