Chocolate-Orange Pancakes

What You Need

2 cups flour

3 oz. Baker's Semi-Sweet Chocolate, chopped

2 Tbsp. sugar

1 Tbsp. Magic Baking Powder

1/2 tsp. salt

2 eggs, beaten

2 cups buttermilk

2 tsp. non-hydrogenated margarine, melted

1 zest from orange

1/2 tsp. oil

Make It

COMBINE first 5 ingredients in large bowl.

WHISK remaining ingredients until well blended. Add to flour mixture; mix well.

LADLE batter onto hot griddle or into hot skillet sprayed with cooking spray, using 1/3 cup batter for each pancake. Cook on medium heat until bubbles begin to form on tops, then turn to brown other sides.

Cooking Know-How

The rising action of baking powder starts acting right away when added to the liquid ingredients. For that reason, prepare pancake batter just before using for best results.

Serving Suggestion

Serve topped with chopped fresh oranges.

I love this recipe! Instead of chocolate chips and orange peel, I put in blueberies. Always a hit at our home :)

Made for a girl's weekend, and they loved them! I added a few chocolate chips to each pancake as they were cooking, instead of to the batter, I find the other way there's too much chocolate in some.
