I am really curious to know if those who didn't like the recipe remembered to DRAIN the pineapple. Also this recipe is supposed to be baked in 2 square pans and from the look of the picture, the layers are not high, thus the time would be accurate. Going to make it and see how it turns out, just for curiosity sake.

This has good flavour but it's so moist it tastes underbaked. The second time I made it I baked it for a lot longer and it still was too wet.

I could not find a spice cake, so I bought the new boxed carrot cake mix, but did not use the dehydrated carrots they provided. Other than that, I followed this receipe exactly and it was wonderful! I especially liked the cream cheese icing made with cool whip -very light and refreshing!

This cake was easy to make and tasted really good but when you tried to cut it, it was a crumbly mess which made for bad presentation. I may add more oil next time or try another recipe!

I set out with great expectations, given the other reviews, but was terribly disappointed. I cooked this recipe an extra 45 minutes, and still, it turned out like mush. I've never had a cake fall before, so I can't say for sure that's what happened, but what I do know is all I was left with was a doughy mess. The pineapple all sank to the bottom, forming a saturated glob. I'm so glad I hadn't prepared this for company - only my family was disappointed! I've tried quite a few Kraft recipes before and have only had success, even if they weren't necessarily to my taste, which made this even more of a disappointment. So much for shortcuts! I guess tomorrow, I'll make a real carrot cake!

I have made this recipe a few times, all with rave reviews! It is by far the BEST carrot cake I have ever had. Not too much spice....just enough! I was unsure about the pineapple but I couldn't taste it in there at all, but it sure makes the cake moist. Was also a little hesitant about the cool whip in the frosting but Wow! So good!

I have made this recipe as described but also made it with a butter pecan cake mix, adding cinnamon, allspice and a touch of cloves, it is "Marvelous" both ways. grammahunnie
