I have made this many times and the family loves it. I leave out the potatoes and serve it with rice. The juice in the foil package is wonderful over the rice.

I made this meal on Wednesday evening. I make foil-pack dinners regularly. They are easy, and you can make them earlier in the day and put them in the oven when you're ready for supper. Nice for busy days.

I made this using fajita seasoning (I didn't have any taco seasoning on hand) and I added some very thinly sliced onions and in mine I added some thinly slices green peppers as well. I par boiled the potatoes a bit (in water in the microwave for 5 mins)before putting them in and it came out perfectly! It was delicious! We also loved that you can individulize what goes into each packet according to each person's taste.

I made this for dinner tonight .. However I did not use taco seasoning , I marinated the chicken with salt and pepper and 2 Tablespoons olive oil for 2 hrs , When ready to bake I topped with salsa and then cheese . This was a hit everyone loved it , the chicken was very moist and cooked to perfection . I did not use any potatoes as my side dish was a spanish rice .

i'd 'half cook' the potatoes using some method before hand.

This was tasty but I found the potatoes to be a little undercooked and the chicken was dry(I used boneless-skinless pieces)and only cooked for 45 mins.

Made this twice and it always turns out very watery with not much flavour to the chicken. What am I doing wrong?
