Take cooking spray and 1-1/2 cups uncooked instant white rice and mix & match your recipe from these options...

meat options	liquid choices	add-in possibilities
4 boneless skinless chicken breasts (about 1 lb.)	1 can (10 fl oz/284 mL) chicken broth, 1/4 cup water	1 cup each sliced red pepper, frozen corn, thawed and green onions, sliced; 1 Tbsp. minced gingerroot, 1 Tbsp. curry powder
1 lb. boneless beef sirloin steak, cut into strips	1 can (10 fl oz/284 mL) beef broth, 1/4 cup water	1 can (10 fl oz/284 mL) sliced mushrooms, drained; 2 cups thinly sliced carrot, 1 tsp. each dried thyme leaves, parsley flakes and garlic powder
4 pork loin centre steaks, boneless (about 1 lb.)	1 can (10 fl oz/284 mL) chicken broth, 1/4 cup water	1 cup each chopped snow peas and grated carrot, 1 Tbsp. each minced gingerroot and garlic, 1 Tbsp. soy sauce
1 can (19 fl oz/ 540 mL) kidney beans, rinsed, drained	1 can (19 fl oz/540 mL) diced tomatoes, 1 cup water	1 cup each chopped green pepper and onion, 1 cup Kraft Tex Mex Shredded Cheese

Then follow our 3 simple steps:

SPRAY large skillet with cooking spray. Add meat; cover. Cook on medium-high heat 10 min. or until cooked through, turning meat over after 5 min.

ADD liquid and rice; mix well. Bring to boil.

STIR in add-ins; cover. Let stand 5 min.

THis was a delicious meal! i would add onion and celery to the beef one, also used long grain rice instead of minute rice, was still great. would definitely make again!

This is an excellent recipe, super easy to make and very tasty. I have made both the chicken and the beef versions, and the final results were as good as the curry dishes served at fine restaurants, for the fraction of the price!
