1-1/2 cups instant white rice, uncooked

1-1/2 cups warm water

4 small boneless skinless chicken breasts (1 lb./ 500 g)

1-1/2 tsp. chili powder

1/4 cup Kraft Calorie-Wise Rancher's Choice Dressing

1/2 cup Kraft Double Cheddar Shredded Cheese

4 cups small broccoli florets

1 cup chopped red peppers (about 1 medium)

PREHEAT oven to 400°F. Combine rice and water; let stand 5 min.

SPOON rice mixture evenly onto centre of each of four large sheets of heavy-duty foil. Top each with 1 chicken breast; sprinkle with chili powder. Drizzle evenly with dressing; top with cheese and vegetables. Bring up foil sides. Double fold top and both ends to seal each packet, leaving room for heat circulation inside. Place foil packets in single layer in 15x10x3/4-inch baking pan.

BAKE 25 to 30 min. or until chicken is cooked through (170°F). Place one packet on each of four dinner plates. Cut slits in foil with sharp knife to release steam before opening.

I thought this recipe was fantastic! I had to use Caesar instead of ranch, but the chicken was delicious and juicy, and the veggies were out of this world. A definite repeat!

I really disliked this meal. The rice was too mushy, and the overall flavors just didn't work for me. I was cringing the entire time while eating it. The cheese, while put on top, ended up sliding to the bottom of the foil, and it took a way longer time to cook than they said. Overall, I was disappointed.

Not a fan of the flavors, used taco seasoning instead and perhaps should have used some other type of seasoning.

This dish is amazing. The whole family loved it, and best of all, clean up is a breeze! Definitly something I can make earlier in the day and have in the fridge ready to throw in the oven too. LOVE it.

My daugher-in-law made this recipe and all of thoroughly enjoyed it..She soaked the rice in chicken broth to give it more flavor.We all loved this dish and I cannot wait to prepare it myself..I would just add more carrots and less broccoli..

I didn't care for this recipe. You would need to substitute the broccoli with another vegetable so it doesn't overcook. It just didn't work for me. And use foil release or pam spray your foil.

Instead of instant rice I used regular rice and cooked it untill it was almost done. Turned out great, the rice probably tasted better than using minute rice. I also used ceasor dressing instead of the ranch. Tasted fantastic and will cook it again!

It was a delicious variation to grilled or barbecued chicken breast. Definitely a hit with the family and I would certainly serve it again. Having next to no dishes to do afterwards just adds to the delight of this meal.

I liked it but I found the rice really bland.. I think I'll add some more cheese or dressing to the rice the next time.
