What You Need

Grated peel and juice from 1 large orange, divided
3/4 lb.  (340 g) fresh asparagus spears
2 Tbsp. oil
1/8 tsp.  each: salt and black pepper
1/4 cup walnut pieces, toasted

Make It

BRING orange juice to boil in small saucepan on medium-high heat. Reduce heat to medium-low; simmer 10 min. or until juice is reduced by half.

MEANWHILE, blanch asparagus. (See Tip.)

DRAIN asparagus; place on serving platter. Add oil, salt and pepper to orange juice; beat with wire whisk until well blended. Drizzle over asparagus. Sprinkle with orange peel and walnuts.

How to Toast Walnuts
Place walnuts on baking sheet. Bake at 350°F for 5 min. or until lightly toasted.
How to Blanch Fresh Asparagus
To blanch fresh asparagus, add the spears to a large pot of boiling water. Cook, uncovered, for 2 to 3 minutes. Drain, then immediately plunge the asparagus into a bowl of ice water to stop the cooking. When completely cool, drain and pat dry.
