Baked Cod in Parchment Parcels recipe

What You Need

3 green onions, coarsely chopped
1/4 cup chopped preserved vegetables
1 Tbsp. reduced-sodium soy sauce
1 tsp. lemon zest
1 cod fillet (1 lb./450 g), cut into 4 pieces
1 cup shiitake mushrooms, stemmed, thinly sliced
1 Tbsp. dried goji berries, hydrated
1/4 cup Kraft Sweet Onion Vinaigrette Dressing
4-1/2 tsp. minced gingerroot
1/4 tsp. ground black pepper

Make It

HEAT oven to 500ºF.

USE pulsing action to process first 4 ingredients in food processor until coarsely chopped. Reserve 1/4 cup vegetable mixture. Spoon remaining over fish in shallow dish; turn to evenly coat both sides of each piece. Let stand 10 min.

PLACE 1 fish piece on each of 4 large sheets parchment paper; top with reserved vegetable mixture, mushrooms and berries. Fold top and ends of each parchment sheet to make parcel; place in single layer on rimmed baking sheet.

BAKE 15 min. or until fish flakes easily with fork. Meanwhile, mix dressing, ginger and pepper.

CUT slits in parchment to release steam before opening parcels. Drizzle dressing mixture over fish.

Place berries in bowl; cover with boiling water. Let stand 10 min. or until berries are plump. Drain, then use as directed.
How to Make Parchment Parcels
To make each parcel, bring long ends of parchment paper together, then double fold, leaving enough room for air to circulate inside. Double fold both ends of each packet, then tuck ends under parcel to seal.
