IN saucepan over medium-high heat, cook 1/2 cup sweetened coconut until golden brown, stirring constantly.
ADD 2 cups water and 1 small sliced banana to saucepan. Bring to a boil and stir in 2 cups instant white rice.
REMOVE from the heat, stir in 1/2 cup dried fruit such as raisins, currants or dried chopped apricots; let stand 5 min.
