What You Need

2 tsp. oil
1 onion, finely chopped
2 stalks celery, finely chopped
2-1/2 cups 25%-less-sodium chicken broth
1 cup pearl barley, uncooked
1/2 cup Kraft 4 Cheese Italiano Light Shredded Cheese
1/4 cup fresh basil, thinly sliced

Make It

HEAT oil in large saucepan on medium-high heat. Add vegetables; cook and stir 5 to 7 min. or until crisp-tender.

STIR in broth and barley; bring to boil. Simmer on medium-low heat 40 min. or until barley is tender and liquid is absorbed, stirring occasionally. Remove from heat.

ADD cheese and basil; mix well.

Substitute
Substitute 4 tsp. dried basil leaves for the sliced fresh basil.
Storage Know-How
Store uncooked barley in airtight container at room temperature up to 9 months.
