MIX dressing and peanut butter until well blended. Heat oil in large skillet on high heat. Add meat; cook and stir 3 to 4 min. or until browned and almost cooked through. Remove meat from skillet; set aside. Add carrots and onions to skillet; cook on high heat 3 min. or until crisp-tender, stirring frequently.
ADD meat, bok choy and peanut butter mixture; cook 4 min. or until meat is cooked through and sauce comes to boil, stirring frequently.
SPOON over rice; top with nuts.
