Always looking for fast easy weeknight meals. This was a definite hit. Took about 30 minutes from start to table. I used a whole bag of oriental veggies, substituted the beef for chicken and used 2 cups of chicken stock. I've made this twice now, and each time my 14 year old son eats 2 heaping plate fulls. I'm going to try it with several different meat ingredients, it seems like it would be very versatile ie shrimp, beef, pork. This will definitely be on our dinner menu every week.
