Broccoli and Corn Scallop recipe

What You Need

1/4 cup chopped onions
3 Tbsp. butter, divided
1/4 cup flour
2 cups milk
1 pkg. (200 g) Kraft Tex Mex Shredded Cheese
1 pkg. (750 g) frozen broccoli spears, thawed, drained
1 can (12 fl oz/341 mL) corn, drained
1/2 cup crushed Ritz Crackers, divided

Make It

HEAT oven to 350°F.

COOK and stir onions in 2 Tbsp. butter in medium saucepan on medium heat 1 min. Stir in flour; cook 1 min., stirring frequently. Gradually whisk in milk until blended. Cook 10 min. or until thickened, stirring constantly. Add cheese; cook and stir 3 to 5 min. or until melted. Add broccoli, corn and 1/4 cup cracker crumbs; mix well.

SPOON into 13x9-inch baking dish sprayed with cooking spray. Melt remaining butter; mix with remaining cracker crumbs. Sprinkle over ingredients in baking dish.

BAKE 30 min. or until heated through.

Serving Suggestion
This vegetable side dish makes a good accompaniment to grilled meat and fruit salad.
Make Ahead
Assemble recipe as directed. Refrigerate up to 24 hours. When ready to serve, bake, uncovered, in 350°F oven 45 min. or until heated through.
