REMOVE skins in quarters from orange and lemon. Lay quarters flat; shave off and discard half of white part. With a sharp knife cut rind very fine. Chop orange and lemon pulp. Peel, core and chop about 2 lbs pears. Combine fruits including maraschino cherries and pineapple. Measure 4-1/2 cups fruit into a large saucepan.
ADD pectin to fruit. Mix well.
PLACE over high heat and stir until mixtue comes to a full boil. Immediately stir in sugar.
BRING to a full rolling boil and boil hard 1 minute, stirring constantly. Remove from heat.
STIR and skim foam for 5 minutes to prevent floating fruit. Pour quickly into warm sterilized jars filling up to 1/4 inch from rim.
SEAL while hot with sterilized 2-piece lids with new centres. If desired, process jars according to lid manufacturer's directions.
