CERTO White Wine and Herb Jelly

Makes 4 cups (1L)
2 cups white wine
3 cups  sugar
1 pouch CERTO Liquid Pectin
12   sprigs fresh herbs, (rosemary or thyme-cut into jar length sprigs to prevent floating)

COMBINE wine and sugar in a large saucepan and mix well.

PLACE saucepan over high heat and bring to a boil. Immediately stir in liquid fruit pectin. Bring to a full rolling boil and boil hard 1 minute, stirring constantly.

SKIM off foam with metal spoon.

INSERT sprigs of fresh herbs into each warm, sterilized jar.

POUR quickly into warm sterilized jars filling up to 1/4 inch (0.5 cm) from rim.

SEAL while hot with sterilized 2-piece lids with new centres.

Cooking Know-How
Any utensils or measuring cups needed for filling jars must also be sterilized.
Jars can be sterilized in the oven at 225°F for 10 minutes and should be kept warm until filling time.
Lids should be sterlized by placing in boiling water until ready to use. Use tongs to remove one at a time.
