What You Need

1 lb. (450 g) red potatoes (about 3), cut into chunks
1 cup small fresh cauliflower florets
1/4 cup light sour cream
1 cup shredded Cracker Barrel Light Cheddar Cheese

Make It

COOK vegetables in boiling water in large saucepan on medium heat 20 min. or until tender. Drain; return to pan.

ADD sour cream; mash until vegetable mixture is light and fluffy. Stir in cheese.

Substitute
Prepare using frozen cauliflower florets.
Use Your Microwave
Place potatoes and cauliflower in large microwaveable bowl; add water to cover. Cover bowl with waxed paper. Microwave on HIGH 20 min. or until vegetables are very tender; drain. Continue as directed.
