what you need

2 cups boiling water
2 pkg. (85 g) Jell-O Cherry Jelly Powder
1 cup cold water
1/2 cup cold pomegranate juice
1 can (10 oz/284 mL) mandarin orange segments, drained
2 cups thawed Cool Whip Whipped Topping
1/4 tsp. ground cinnamon
1/8 tsp. ground cloves

STIR boiling water into dry jelly powder in 2-L serving bowl at least 2 min. until completely dissolved. Stir in cold water and juice. Refrigerate 1 to 1-1/4 hours or until thickened (spoon drawn through leaves definite impression).

REMOVE 1/4 cup of the oranges; set aside for later use. Add remaining oranges to jelly; stir gently. Refrigerate 30 min. or until jelly is set but not firm (jelly should stick to finger when touched and should mound). Combine whipped topping and spices; spoon over jelly.

REFRIGERATE 4 hours or until firm. Top with reserved oranges just before serving. Garnish with mint leaves if desired. Store any leftovers in refrigerator.

Jazz It Up
Stir 1 Tbsp. grated orange peel into the jelly mixture along with the oranges.
Variation
Prepare as directed, using Jell-O Strawberry Jelly Powder and/or substituting orange juice for the pomegranate juice.
