Chicken Mediterranean

Chicken Mediterranean recipe

What You Need

1/2 cup Miracle Whip Calorie-Wise Dressing
1/4 cup chopped fresh parsley
1/4 cup lemon juice
2 cloves garlic, minced
1 Tbsp. dried oregano leaves
2 Tbsp. 25%-less-sodium chicken broth
1-1/2 tsp. black pepper
3 lb. (1350 g) bone-in, skinless chicken pieces (breasts, thighs, legs)

Make It

MIX all ingredients except chicken in large bowl. Add chicken; toss to coat. Refrigerate 4 hours to marinate.

HEAT oven to 400°F. Remove chicken from marinade; discard marinade. Place chicken on rack in shallow baking dish.

BAKE 50 to 55 min. or until done (170ºF).

Substitute dry white wine or water for the chicken broth.
Serving Suggestion
Serve with a Greek salad and toasted pita wedges.
