HEAT oven to 400°F.
GRATE peel from fruit. Mix peel with coating mix; use to coat chicken as directed on package.
CUT fruit into thin slices. Arrange, in slightly overlapping rows, on bottom of foil-lined or parchment-lined 13x9-inch pan; top with chicken.
BAKE 30 min. or until chicken is done (170ºF). Serve with fruit slices.
