1 each: lemon, lime and orange
1 pouch  SHAKE'N BAKE Extra Crispy Original Coating Mix
4 small boneless skinless chicken breasts (1 lb./450 g)

PREHEAT oven to 400°F. Grate peel from fruit. Mix peel with coating mix, then use to coat chicken as directed on package.

CUT fruit into thin slices. Arrange, in slightly overlapping rows, on bottom of foil-lined or parchment-lined 13x9-inch baking pan; top with chicken.

BAKE 30 min. or until chicken is cooked through. Serve with the fruit slices.

Bitterness comes from the white pith which is under the citrus peel. Remove only the outer coloured peel of the citrus fruit using either a grater or zester. For a less tart flavo ur, reduce the amount of citrus fruit in half.

" My family loves this recipe, although I found the lime too strond the first time. Now I add more lemon and orange zest, and cut back on the lime, and omit the slices to avoid soggy bottoms. But great otherwise!"
