What You Need

1-1/2 zucchini, cut into matchlike sticks (about 3 cups)
2 cups cauliflower florets
2 tsp. oil
2 cups penne pasta, cooked, drained
1-1/2 cups halved cherry tomatoes
1 tsp. dried basil leaves, crushed
165 g Velveeta Process Cheese Product, cut up (about 1 cup)

Make It

COOK and stir zucchini and cauliflower in hot oil in large nonstick skillet on medium heat until vegetables are crisp-tender.

ADD pasta, tomatoes and basil; mix lightly. Cook until heated through, stirring occasionally.

STIR in Velveeta; cook until Velveeta is completely melted and mixture is well blended, stirring occasionally.

Mix zucchini, cauliflower and oil in 3-L microwaveable casserole dish; cover. Microwave on HIGH 4 to 6 min. or until vegetables are crisp-tender, stirring every 2 min. Add remaining ingredients; mix lightly. Microwave on MEDIUM 4 to 6 min. or until Velveeta is completely melted, stirring every 2 min.
