What You Need

4 small boneless skinless chicken breasts (1 lb./450 g)

1 pouch Shake'N Bake Coating Mix

2 Tbsp. pesto

1/4 cup Kraft Mozzarella Shredded Cheese

Make It

HEAT oven to 400ºF.

COAT chicken with coating mix. Place in 8-inch square baking dish.

BAKE 20 min. or until done (170ºF).

TOP with pesto and cheese; bake 5 min. or until cheese is melted and lightly browned.

I add a few slices of thinly sliced tomato on top of the pesto & under the cheese. My family loves it.

I am a busy working mom of two. One of my children is very picky about her food. I was sceptecal about this recipe, but i thought I would try it because, I know one meat she does like is chicken. She loves it and can't wait to have it again. I thought the pesto and mozzerella cheese was a nice change from just the plan old shake n bake mix, and it tastes really good. My family really liked it.
