Double-Banana Bread

What You Need

1-1/2 cups flour
1/2 cup  sugar
2 tsp. MAGIC Baking Powder
1/2 tsp.  baking soda
1/2 tsp. salt
2   eggs
1-1/2 cups mashed ripe bananas (2 to 3 bananas)
1/4 cup  oil
1/4 cup water
1-1/2 cups  banana nut whole grain cereal flakes
1 cup chopped walnuts

Make It

PREHEAT oven to 350°F. Mix flour, sugar, baking powder, baking soda and salt in large bowl; set aside. Beat eggs in medium bowl. Add bananas, oil and water; mix well. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal and walnuts.

POUR evenly into four greased miniature (5-11/16x3-9/32-inch) disposable foil loaf pans.

BAKE 40 min. or until wooden toothpick inserted in centres comes out clean. Cool in pans 10 min.; remove from pans to wire racks. Cool completely.

Creative Leftovers
For easier slicing, wrap bread and store overnight at room temperature before slicing.
Variation
Prepare batter as directed. Pour into 9x5-inch loaf pan. Bake 55 min. to 1 hour 5 min. or until wooden toothpick inserted in centre comes out clean. Makes 18 servings, one slice (53 g) each.
How to
To wrap these mini loaves, first wrap in parchment paper; overwrap a festive tea towel and tie with a ribbon.
