Easter Cupcakes

Why not just make the cookie nests in the other Easter recipe and place them on top of the cupcake?

I made these as directed in the recipe, and yes it took a long time to chop the flake bars, but it was worth the work for the flavor. They were difficult to transport, and next time I would just put the "nest and eggs" on when I get to where I'm going instead! I also like the idea of building up an icing ring and filling it with chocolate - might try that too!

This was super quick and easy to make. I piped icing onto the cupcake, which is far faster and easier than trying to use a spatula. I then sprinkled the chocolate (I didn't have the flake bars, so i used bakers squares and used a veggie peeler to shave curls), dabbed a bit of icing under each egg and positioned them. They transported very well and were a hit.

After reading the problems encountered by "cook" I decided to try a few different things. I melted chocolate wafers and thinly spread it on the back of a cookie sheet. Once cool I scraped the chocolate off with a metal spatula. This only took a minute or two. I spread a thin layer of icing on each cupcake and then, with a piping bag, piped a circle around the edge of the cupcake. I made this circle three layers high. I put the chocolate flakes in the centre and gently pressed to make them adhere. The cupcakes were transported with no problem and I put the eggs on top once we reached out destination. I appreciate the first review as it saved me from some headaches!

The prep time is NOT 15 minutes. It takes much longer to chop up the chocolate, arrange it and try to balance the eggs on top. Good luck transporting these anywhere!
