What You Need

2 cups vanilla ice cream, slightly softened
1 cup  chopped peanuts, divided
30 CHIPS AHOY! Cookies

Make It

MIX ice cream and 1/2 cup of the peanuts. Freeze 20 to 30 min. or until firm enough to hold its shape.

SPOON about 2 Tbsp. of the ice cream mixture onto bottom side of each of 15 of the cookies; cover with second cookie, top-side up, to make a total of 15 sandwiches.

ROLL edges in remaining 1/2 cup peanuts. Freeze 1 to 2 hours or until firm.

For bite-size sandwiches, prepare as directed, using 60 Christie Mini Chips Ahoy! Cookies and filling each cookie sandwich with 2 tsp. of the ice cream mixture. Makes 15 servings, two mini sandwiches (30 g) each.
Storage Know-How
Wrap sandwiches individually in plastic wrap or foil and store in freezer-weight resealable plastic bag in freezer for up to 2 weeks.
Variation
Prepare as directed, using your favourite flat-bottomed Christie Cookies and substiting chopped Baker's Semi-sweet chocolate, chopped Jet-Puffed Miniature Marshmallows or chopped Mini Oreo Cookies for the chopped peanuts.
