I made this for dinner for the family on Valentine’s Day. What a huge hit! My husband and teenaged boys just could not have enough of it.
It was also quite pleasing to the eye on the dining table, and it came out just as in the picture.
The breasts I purchased was large, so based on the comments of others, I decided to cut them in half lengthwise and fried them first. I then coated the chicken with the cream and crackers and added them to a new skillet to be browned. Within a minute they were all browned on the outside. Absolutely no way they would have been cooked properly, if I didn’t pre-fry them.
I also found that the sauce as per the recipe was way too tangy. Thanks to tips from other reviewers, I was prepared for this, and added sugar and one tablespoon ketchup (yes, I did) to create to offset the lemon a little. I let the sauce simmer and it thickened nicely, so there wasn’t a need for cornstarch.
