BEAT cream cheese spread and vanilla in large bowl with mixer on low speed until well blended.
ADD boiling water to jelly powder in small bowl; stir 2 min. until completely dissolved. Add cold water; stir until slightly thickened. Gradually add to cream cheese mixture, beating until well blended after each addition. Gently stir in berries and 1-1/2 cups Cool Whip .
SPOON into 10 dessert dishes. Refrigerate 1 hour or until firm. Serve topped with remaining Cool Whip.
