"Egg"-stra Special Skillet Dish recipe

What You Need

1 lb. russet potatoes (about 3 medium), peeled, cubed (about 3-1/2 cups)
6 slices bacon, chopped
1/2 of a medium red pepper, chopped
1 small onion, chopped
6 eggs
1 cup Kraft Double Cheddar Shredded Cheese

Make It

PLACE potatoes in large saucepan; cover with water. Bring to boil; continue boiling 5 minutes. Drain well and set aside.

COOK bacon in large frying pan on medium-high heat. Remove from frying pan; drain on paper towels. Wipe out frying pan with paper towel. Add peppers and onions to pan. Reduce heat to medium; cook and stir 3 minutes. Add potatoes; cook an additional 15 minutes, stirring occasionally.

MAKE 6 small wells in potato mixture. Add 1 egg to each well; sprinkle evenly with bacon and cheese. Cover pan with lid. Cook 5 to 8 minutes or until eggs are set.

Variation
Scramble the eggs before adding to the frying pan. Do not make wells in the potato mixture, just spoon the hot scrambled eggs evenly over the potato mixture in frying pan. Top with bacon and cheese and continue as directed.
