What You Need

1 can (19 fl oz/540 mL) diced tomatoes, drained
1 pkg. (120 g) Stove Top Lower Sodium Stuffing Mix for Chicken
2 cloves garlic, minced
4 small boneless skinless chicken breasts (1 lb./450 g)
1 tsp. dried basil leaves
1 cup Cracker Barrel Part-Skim Mozzarella Cheese

Make It

HEAT oven to 400°F.

COMBINE tomatoes, stuffing mix and garlic just until stuffing mix is moistened.

PLACE 1 chicken breast on centre of each of 4 large sheets of heavy-duty foil sprayed with cooking spray; top with basil, stuffing mixture and cheese. Bring up foil sides; double fold top and ends to seal each packet, leaving room for heat circulation inside. Place in 15x10x3/4-inch pan.

BAKE 30 to 35 min. or until chicken is done (170ºF). Cool 5 min. Cut slits in foil to release steam before opening packets.

Serve with steamed Italian-style vegetables.
Substitute
No heavy-duty foil on hand? Just use double-layer sheets of regular foil instead.
