When I made this recipe I didn't have fresh tomatoes so I used a 28 oz. can of whole tomatoes and put them in a food processor. Added a touch of sugar ( approx. 1/2 tsp. ) and some salt & pepper. Also used about 1/4-1/2 tsp of dry cilantro leaaves as I had no fresh cilantro. In spite of the changes, it was delicious, everyone loved it and I will definitely keep this on my favorite list.
