My family loved this recipe. It was delicious! I didn't have any ginger crisps so I substituted crushed digestive cookies with ginger mixed in. It worked like a dream! Also, make sure not to defrost the whipped topping too much. Your cream cheese mixture will be too soft. I also love how easy it is to make and how many creative variations I could play around with. I am thinking of putting cocoa in the filling instead of pear juice and putting sliced strawberries on top. Then, substitute chocolate or graham crumbs for the ginger.
