PREPARE dessert topping mix as directed on package.
GREASE a 8-inch (20 cm) springform pan and sprinkle with crumbs.
PLACE jelly powder in blender container. Add water and blend on low speed until dissolved. Add cream cheese and blend at medium speed until smooth, scraping sides of blender. Pour into a large bowl.
WHISK in lemon rind, juice and dessert topping. Pour into prepared pan. Chill 4 hours. Serve with fresh fruit.
