what you need

4 small boneless skinless chicken breasts (1 lb.)
1 Tbsp. oil
1 medium onion, chopped
1-1/2 cups instant white rice, uncooked
1 can (14 fl oz/398 mL) peach slices in light syrup, undrained
1/3 cup mango chutney
2 tsp. curry powder

make it

COOK chicken in hot oil in large frying pan on medium heat until chicken is cooked through, turning chicken over and adding onion to the pan after 8 minutes.

ADD rice, peaches with their juices, chutney and curry powder; mix well.

BRING to boil; cover. Remove from heat. Let stand 5 min.

Spice It Up
For a stronger curry flavour use medium or hot curry powder. Add 1/2 tsp. ground cumin, ginger or coriander for a more authentic flavour.
