HEAT oil in large skillet on medium-high heat. Add chicken; cook 6 to 7 min. on each side or until done (170ºF). Meanwhile, prepare couscous following package directions omitting salt and oil. Combine remaining ingredients.
REMOVE chicken from skillet; place on top of couscous on platter. Cover to keep warm. Add mango mixture to skillet; cook 1 min. or until heated through, stirring occasionally. Spoon over chicken.
