What You Need

1-1/2 lb. lean ground beef

2/3 cup dry bread crumbs

1 cup Kraft Onion BarBQ Sauce, divided

1 egg, beaten

1 pkg. (120 g) Stove Top Stuffing Mix, Long Grain & Wild Rice flavour

1 pkg. (300 g) frozen chopped spinach, thawed & well drained

1 large carrot, shredded

Make It

COMBINE ground beef, crumbs, 1/2 cup barbecue sauce and egg, roll out mixture between 2 pieces of waxed paper to cover 15 x 10 inch rectangle.

PREPARE stuffing according to package directions; add spinach and carrot.

SPREAD stuffing over meat mixture. Roll up, starting at 10 inch side.

BAKE at 350°F for 1 hour. Glaze by brushing with remaining barbecue sauce; bake for an additional 15 minutes.

I had only 1 lb of beef, and used a different flavor StoveTop, but it still tasted great. My family don't normally eat meatloaf, but they gobbled this one up!

This recipe was a success... although I didn't use ground beef, I just ground chicken and it was awesome. I do plan on trying it with ground beef. The only thing was that I could not find the Stove Top stuffing, long grain and wild rice flavour... so I used regular Chicken Stove Top and add Italiano seasoning.

The best meatloaf I have eaten used fresh spinach and could not find onion stuffing so used chicken.

The only thing I did different from the recipe was I used a different kind of barbeque sauce because that's what I had on hand. Other than that, it was delicious and my family is still talking about it. It's definitely a keeper!

I only had 1 lb of ground beef on hand and found the spinach overwhelming as a result. I also had regular stuffing instead of the long grain and wild rice flavour stuffing so I added rice and a little more liquid. The recipe would have been completley ruined if not for the flavour of the glaze. I would try this again but add more meat and the correct stuffing flavour. Maybe it's unfair to rate as a result...but I'll give it 3 stars for now until my next attempt.
