COMBINE ground beef, crumbs, 1/2 cup barbecue sauce and egg, roll out mixture between 2 pieces of waxed paper to cover 15 x 10 inch rectangle.
PREPARE stuffing according to package directions; add spinach and carrot.
SPREAD stuffing over meat mixture. Roll up, starting at 10 inch side.
BAKE at 350°F for 1 hour. Glaze by brushing with remaining barbecue sauce; bake for an additional 15 minutes.
