What You Need

8 Stoned Wheat Thins Crackers
2 plum tomatoes, chopped
1 large cucumber, peeled, chopped
1 small red pepper, chopped
1/2 cup tightly packed, coarsely chopped fresh spinach
3 green onions, finely chopped
1/4 cup finely chopped fresh mint
1/4 cup Kraft Calorie-Wise Zesty Italian Dressing
1/4 cup fresh lemon juice

Make It

HEAT broiler.

PLACE crackers in single layer on baking sheet. Broil 1 min. or until lightly toasted. Break into small pieces.

COMBINE next 6 ingredients in serving bowl.

MIX dressing and lemon juice. Add to salad; toss to coat. Add crackers; mix lightly. Refrigerate 1 hour.
