Mexican Chicken Skillet recipe

What You Need

1 tsp. oil
4 small boneless skinless chicken breasts (1 lb.)
1/4 cup Miracle Whip Original Spread
1-1/2 cups instant white rice, uncooked
1-1/2 cups chicken broth
1 Tbsp. chili powder
1/2 cup chopped tomatoes (about 1 medium)
1/2 cup Kraft Old Cheddar Shredded Cheese
1/4 cup cilantro

Make It

HEAT oil in large skillet on medium-high heat. Add chicken; cook 3 to 4 min. on each side or until cooked through.

COMBINE Miracle Whip, rice, broth and chili powder; pour into skillet around chicken breasts. Bring to boil; cover. Reduce heat to low; simmer 5 min.

ADD tomatoes and cheese; cook, covered, an additional 2 min. or until cheese is melted. Sprinkle with cilantro.
