Mexican Pork with Vegetable Rice

What You Need

1-1/2 cups instant white rice, uncooked
1/2 cup frozen whole kernel corn
1 env. taco seasoning mix, divided
1 Tbsp. finely chopped cilantro
2 tsp. oil
1 lb. pork tenderloin, cut into strips
1 cup each: red pepper strips, zucchini strips, onion wedges
1/2 cup water

Make It

COOK rice as directed on package, adding the corn and 1 Tbsp. of the taco seasoning to the boiling water along with the rice. Stir in cilantro.

HEAT oil in large nonstick skillet on medium-high heat. Add pork; cook and stir 2 to 3 min. or until evenly browned. Add remaining taco seasoning, the peppers, zucchini and onions; stir in water. Cook 5 min. or until vegetables are crisp-tender, stirring occasionally.

SERVE spooned over the rice mixture.

Cover and refrigerate any leftovers. Spoon onto warmed flour tortillas, then roll up.
