Mexican Rice recipe

what you need

1 onion, chopped
1/2 lb. lean ground beef
2 Tbsp. chili powder
1 tsp. ground cumin
1 can (19 oz/540 mL) black beans or kidney beans, drained
1-1/2 cups each: instant white rice, tomato juice and frozen corn kernels
1/3 cup each: chopped fresh cilantro leaves and grated Cracker Barrel Light Old Cheddar Cheese

make it

BROWN onion and beef in large saucepan. Stir in remaining ingredients except cheese. Bring to a boil.

STIR in rice and cilantro. Cover; remove from heat and let stand 5 min.

SPRINKLE with cheese and cover and let stand until cheese melts.
